Technique
Viticulture
Vines planted half in 1997 and half in 2004. The Mâcon Prissé comes from the La Verchère plot in the commune of Prissé. It faces due east and has an altitude of around 200 metres and a gentle slope. The soil has a nice clay structure on a hard limestone subsoil. The vines are cultivated organically (Ecocert certification) and biodynamically.
Oenology
Manual harvesting. The Mâcon Prissé is vinified in tuns (oval wooden containers of 45 to 55hL). It is kept on the lees for nine months before racking and preparation for bottling at the end of July.
Suggestions for accompaniment
Andouillette with mustard sauce - Crispy sea bass with foie gras - Beaufort cheese soufflé - Almond trout.
