Viticulture
Vines planted between 1982 and 1985. The Macon Milly-Lamartine Clos du Four comes from a clay-limestone plot located in the commune of Milly-Lamartine. The vineyard faces east; it is located in the middle of the hillside at an altitude of around 250 metres. The soil has a nice deep clay structure on a hard limestone subsoil, with many small stones. The plots are cultivated organically and biodynamically.
Oenology
Manual harvesting. The Macon Milly-Lamartine Clos du Four is vinified only in demi-muids (500L to 700L barrels). It is kept on lees for nine to ten months before racking and preparation for bottling in September.
Suggestions for accompaniment
Andouillette with mustard sauce - Crispy sea bass with foie gras - Beaufort cheese soufflé - Almond trout.
