Viticulture
Vines planted in 1987. The Milly-Lamartine Mâcon is a blend of several clay-limestone plots in the Milly-Lamartine area. The vineyard is east-facing and has a steep slope. It is at a fairly high altitude for the Mâconnais (up to 350 metres), which explains its cool, late appearance. The soils have a nice shallow clay structure on a hard limestone subsoil, with many small stones. The plots are cultivated organically (ECOCERT certification) and biodynamically.
Oenology
Manual harvesting. The Mâcon Milly-Lamartine is vinified in foudre (oval wooden containers of 45 to 48hL) and for a third in demi-muids (barrels of 500 to 700L). It is kept on the lees for seven to eight months before racking and preparation for bottling in July or August.
Suggestions for accompaniment
Andouillette with mustard sauce - Crispy sea bass with foie gras - Beaufort cheese soufflé - Almond trout.
