Viticulture

This estate, run by Nicolas Thienpont and advised by Stéphane Derenoncourt, is located on the very late eastern limestone plateau of St-Emilion, not far from Troplong-Mondot. Cabernet Sauvignon grapes are used in only one in five of the final blends.

Oenology

The soil has a very strong clay texture (‘terres amoureuses’), a cold soil that quickly turns austere if ripeness is not ideal. A great deal of work has gone into the vineyard (part of it has been biodynamic since 1990).

Suggestions for accompaniment

Grilled ribs - Chateaubriand with Béarnaise sauce - Mature Comté or Manchego
