Viticulture
For a long time, this small vineyard of just 8 hectares remained in the shadow of the great local names. The owners of Chasse-Spleen acquired it in 1988. The 35-year-old vines grow down towards those of Château Margaux. Ferrière is the smallest C.C. in the Médoc. The soil is composed of deep Garonne gravel deposited on limestone marl. The vines are grown in the traditional way (shovelling and removal of shoots).
Oenology
Harvested by hand. Vinification in temperature-controlled stainless steel vats. Maceration for around 20 days during vinification. Malolactic fermentation in barrels. Traditional ageing for 16 to 18 months in oak barrels (60% renewed every year). Fining with egg whites in barrels.
Suggestions for accompaniment
Beef cutlet with shallots - Pot-roasted veal quasi - Duck breast - Guinea fowl with morel mushrooms.
