Viticulture
The Sugarille vineyard covers 4.5 hectares and is mainly clay-limestone with some marl. The vines are around twenty years old. This vineyard appears for the first time in the inventory of Pieve Santa Restituta properties in 1547.
Oenology
Fermentation and maceration in stainless steel vats for around three weeks. After maturing in oak barrels for twenty months, Sugarille is matured for a further year in tuns, followed by two years in bottle. The first vintage produced by Gaja was 1995.

Venison stew - Saddle of hare - Roast woodcock - Eggplant and beef cannelloni.
