Technique
Viticulture
The vines are grown at an altitude of between 600 and 800 metres, in the municipalities of Biancavilla and Belpasso, at the foot of Mount Etna.
Oenology
After the whole grapes have been cold pressed and statically clarified, fermentation takes place at a controlled temperature of between 18 and 20°C, in both 10 hectolitre oak tuns and stainless steel vats. The following year, the wine is bottled in October.
